1/2 C of Lemon Juice
1 TBS lemon rind
1/4 tsp lemon extract
8 oz container of Cool Whip Free
5 sheets (10 crackers) Low Fat
2 TBS Unsalted Butter
1 TBS Splenda Brown Sugar


How Do I Make Sparky's Lemon Freezer Pie?

Here is how you make Sparky's Lemon Freezer Pie:

Be sure that your cool whip is defrosted to refrigerator temperature before starting recipe. Put the can condensed milk in a sauce pan and start to heat, once milk has gotten warm mix in the 3/4 cup of Splenda No Calorie. Bring to a boil and simmer for several minutes until the milk reduces down and thickens. Once it thickens up, place the pan in the refrigerator (or freezer for quicker results) until the milk is at room temperature or cooler. While chilling milk, make the graham cracker crust. Put graham crackers in a food processor and grind to a fine crumb. Mix in brown sugar thoroughly then mix in 2 tbs. melted butter. Stir with fork until combined. Press into pie shell. Refrigerate for 30 minutes before baking. Bake pie crust at 350 for 15 minutes until golden brown. Remove from oven and let cool on a baking rack while you finish mixing the pie mixture. Put the milk/sugar mixture into a mixing bowl. With an electric mixer combine milk/sugar mixture, 1/2 cup of lemon juice, lemon zest, and lemon extract, beat until thoroughly mixed. Fold in 1/2 of whipped topping. Once the topping is mixed in well pour into the pie crust. Layer the other 1/2 of whipped topping over entire pie to form a second layer. Freeze for at least 4 hours.
