Here is how you make THM Key Lime Pie:

For the crust: Preheat oven to 350. Place 1 cup THM Baking Blend, 5 tablespoons cold butter and sweetener into a food processor. Process to a course meal. Add the egg yolks and mix well. Add 1 Tablespoon cold water and pulse again. Line a 8x8 glass baking pan with parchment paper. spread mixture evenly. using a 1 cup measuring cup covered with parchment paper, press down the crust. Bake for 10 to 15 minutes or until slightly toasted. Let cool before filling.For the filling: In a small bowl sprinkle 1 Tablespoon of gelatin over 1/4 cup cold water, set aside to soften. Place 1 cup low fat cottage cheese, 12 ounces 1/3 less fat cream cheese,2 1/2 tablespoons stevia, 2 1/2 tablespoons Erythritol, 2 1/2 tablespoons Xylitol, 8 grams or 8-10 spinach leaves, 1/3 cup lime juice, 2 or 3 drops lime extract or oil (optional) in a blender. Blend well so you don't see any spinach bits. If your blender doesn't grind up good enough. Skip them. They are just for color. Process until smooth. Add 1/4 cup hot water to the gelatin mixture. Mix and then add to the blender. Mix again. When the pie crust is baked and cooled pour over crust. Chill in the refrigerator for two hours.To make the topping: Beat with a hand mixer, the heavy whipping cream with 3 tsps stevia, 3 tsps erythritol and 3 tsps Xylitol until stiff peaks form.
