Take a single crust for a 9 inch pie, and bake at 350 until golden. Use pie weights or dried beans over parchment paper to prevent the crust from bubbling up.Place maple syrup in a heavy saucepan. Heat for 5-7 minutes over medium heat to reduce the volume by about 25%. When reduced, and the heavy cream and bring to a simmer. Beat 4 yolks and one egg. Slowly add the maple cream whisking all the while you are combining. Add spices, mix again. Pour into pie shell. Bake approx 60 minutes until firm to the touch, but pie will be jiggly.
