Cut in shortening until the size of small peas. Add cold water one tablespoon at a time until the dough forms a nice soft ball. Divide the dough in 1/2 and roll out the one ball, place in a nine inch pie plate. The other ball will be for your top crust.FillingPlace all of your sliced apples in a large bowl. Add flour, sugars, salt and cinnamon to the apples and mix well. Pour filling into the rolled out bottom crust, mounding the mix in the center. Dot the apples with small chunks of the butter.Add the rolled out top crust and seal edges with water. Decorate the edges as desired with scallops or fork impressions.
