Fresh pumpkin all year long. In the fall buy a large fresh pumpkin. Cut in half or in fourths and clean out all seeds. Cover the bottom of a large cake pan with about an inch of water. Place pumpkin in pan, cover with foil and bake at 375 until soft. Scoop pumpkin from the outer skin and use the blender to puree the pumpkin. Place puree in quart freezer bags. Two cups of puree in each bag and make sure to remove the air from the bag. Lay flat on a freezer shelf. Stack the bags on top of each other. A large fresh pumpkin should yield approx. sixteen cups of puree. That will make eight pies. Thaw pumpkin when ready to use. Add ingredients listed to make a great pie.
