Here is how you make Pumpkin Pie with Mock Crust:

Preheat oven to 350 degrees F. Spray a 9 or 10 inch pie plate with non-stick baking spray. In a large bowl, combine all ingredients and mix till thoroughly incorporated. Pour into pie plate and place in center of oven. Bake 40 minutes and check for done-ness by inserting a table knife halfway between rim and center. If it comes out clean, pie is done, if not continue baking checking every 5 to 10 minutes. When done, cool to room temperature then refrigerate.
