1 1/2 cups dry quinoa
1/2 cup chopped walnuts
3 tbsp olive oil
1/2 cup light soy milk
2 tbsp organic maple syrup

5 cups peaches or nectarines (about 7 medium) peeled and sliced
1 cup unsweetened apple juice
1/4 cup tapioca flour dissolved in 1/4 cup cold water
pinch sea salt

Here is how you make Peach Pie with Quinoa Walnut Crust:

Preheat oven to 350 degrees. Place quinoa in a dry blender and grind until it becomes a fine flour. Place in a mixing bowl. Coarsly grind walnuts. Add to the quinoa flour. Add oil, soy milk and syrup. Mix thoroughly. Press into a 9" pie plate. Pre-bake for 10 minutes.Meanwhile, plave peaches, juice and salt in a medium saucepan and bring to a boil. Reduce heat to low and slowly add the dissolved tapioca. Stir constantly to prevent lumping.
