In a large bowl, combine the clear Jell with the cold water until smooth. In a very large kettle, combine the sugar, salt, hot water, food coloring if disired and the lemon juice. Bring to a boil. Remove from heat and stir in the clear jell mixture. Return to low heat and cook and stir for 2 more minutes. Remove from heat and add almond extract and raspberries. Place into clean Jars and hot water bath for 20 minutes. makes about 13 quarts.
