This is my version of the Cool Whip recipe found here: http://allrecipes.com/Recipe/Raspberry-Lemonade-Pie/Detail.aspxI wanted to make it healthier, so I made my own crusts, used lighter cream cheese, and fat free cool whip. I would have used a light version of lemonade jell-o and concentrate, however I and many other people do have aspartame sensitivity. I'm sure if you switched those to "light" the caloric count would also decrease!

4 Cups Finely Crushed Graham Crackers
12 Tbsp I Can't Believe It's Not Butter (melted)
0.75 Cup Egg Beaters
0.5 Cup White Sugar
4 oz Light Cream Cheese (softened)
8 oz Tub (50 Tbsp) of Fat Free Cool Whip (thawed)
12 oz Can of Frozen Lemonade Concentrate (thawed)
1 Package (3oz) Jell-o Lemon Flavored
1.75 Cups Raspberries (frozen or fresh)
1.5 Cups Boiling Water


How Do I Make Lighter Raspberry Lemonade Pie?

Here is how you make Lighter Raspberry Lemonade Pie:

Mix crushed crackers, egg beaters, sugar and butter together until you've got a pasty consistency. Spread mixture into two 10 inch pie plates and make a crust for each plate. Bake for 10 minutes at 350F, take out and set aside to cool.Add boiling water and jell-o packet together in a small bowl. Set aside. Whip the cream cheese until creamy in a big bowl, and slowly add lemonade concentrate. Do the same for the cool whip as well. Then add the jell-o mixture and mix until well mixed, and then add raspberries. Divide out mixture into the cooled pie crusts and place in freezer for at least 2 hours, or until solid. Because of the lighter ingredients, once the pie has been at room temperature for some time, it will become more jell-o-like, so freezing helps it keep together, although do take out of the freezer about 30 minutes before serving.Makes 28 evenly divided pie slices.Number of Servings: 28Recipe submitted by SparkPeople user DOGSNRODENTS.
