2 1/4 c sugar
1 1/2 T flour
1 1/2 T tapioca
1 1/2 T corn starch
1/2 t salt
3 lg eggs
2 t vanilla extract

2 pie crusts (makes one deep dish pie)

Here is how you make Yvonne's Rhubarb-a-licious pie:

Chop (thaw) rhubarb and set aside.In a large bowl, beat eggs and vanilla.Add sugar, flour, tapioca, corn starch and salt.Now add the rhubarb and mix to coat rhubarb well.CRUST:Spray pie pan with cooking spray then place the crust in pie plate.Pour the rhubarb mixture into the pie and cover with the second crust.Press edges together and vent the top crust.Brush with a little milk and sprinkle just a little sugar on top.Bake 15 minutes at 400then 45 minutes at 350Cut pie into 8 pieces
