Preheat oven to 300 degrees FLine 4 8x12 inch pans with parchment paper greased.2. In a large glass or metal mixing bowl, beat egg whites until soft peaks. Add cream of tartar. Gradually add 2 cups(suagr/splenda mixture) until stiff peaks. Fold in 1 cup grinded pistachios. Divide meringue between the 4 pans and spread evenly to edges.3. Bake in preheated oven for 40 minutes (original recipe called for 30 minutes) or better when it's golden brown.4. Remove the meringue from baking pans white still hot. Allow to cool. When cool trim edges to that all 4 meringue layers are uniformly shaped. Set aside.5. To make buttercream filling, in a large bowl, beat butter until light and fluffy. In a separate bowl, whip egg yolks until thick lemon colored.6. Meanwhile in a saucepan, combine the 2 cups sugar/splenda and 1 cup water to a boil until s small amount of syrup dropped into cold water forms a hard but pliable threads. Add the hot syrup in a thin stream to the beaten egg yolks while beating in high speed. Beat in the whipped butter until smooth. Beat in rum.7. On one layer of meringue, spread 1/4 buttercream evenly to edges. Sprinkle some pistachios then put next meringue. Repeat this per layer until all is used. Smooth the rest of buttercream to sides with spatula, then sprinkle the rest of pistachios. Freeze until solid.8.
