2 cups shredded coconut - unsweetened
1 cup ground almonds or almond flour
1/2 cup Splenda, or appropriate amount of Stevia or other sweetener
2 tsp. cinnamon
4 Tbsp. Promise Light Margarine

"Sauce"
8 ounces fat-free cream cheese
1 tub Sugar-Free Cool Whip

Toppings
1 small banana, sliced into 1/4" slices (need 12 slices)
6 fresh strawberries, hulled & halved
6 seedless grapes, halved
2 kiwi fruit, peeled & sliced (need 12 slices)

Glaze
1/2 cup Just Fruit Apricot Spread
1/4 cup water

Note: Other fruits can be used, but will change the nutritional values. Suggestion include blueberries, blackberries, mandarin orange slices, and pinapple. You can also mix in crushed pineapple with the cream cheese mixture.

Here is how you make Fruit Pizza w/Coconut-Almond Crust:

Preheat oven to 350 degreesSpray a 9x13 baking dish or cookie sheet with non-stick spray. Combine crust ingredients and press into the bottom of the pan. Bake in preheated oven 15-20 minutes. Allow to cool.Mix cream cheese until smooth & fluffy. Mix in Cool Whip. Add a touch of Vanilla or Almond extract if desired. Spread "sauce" on cooled crust.Arrange fruit decoratively on top of cream cheese mixture. A good idea to make serving easier is to lay out the kiwi fruit in the center of each piece, then arrange the other fruits on or around it, leaving a little bit of exposed filling in between.Mix the apricot spread and water together. Use a spoon or basting brush to cover the fruit. This will help keep fruit from turning colors.Keep refrigerated until time to serve.
