Here is how you make Vita Potato Cheddar Bake:

In a high speed blender grate 1 potato and drain, set aside. In the high speed blender put the eggbeaters, milk, cheddar cheese, red or green peppers, and onions. Blend 20 seconds. Add drained potatoes bake and pulse till blender. You can add salt and pepper if you want. Pour into a 9 inch pan sprayed with Pam or Olive oil.
