Spray 4 custard cups (ramekins) with cooking spray. In a bowl, whisk together cooled, melted butter, egg and milk. In another bowl, mix flour, 1/2 cup of the brown sugar, 3 tbsp of the cocoa, baking powder and salt.Make a well in the center of the flour mixture and pour in the egg mixture. Stir until just combined, so the flour is no longer visible. Evenly divide the batter into the ramekins.In a small bowl, combine the remaining 2 tbsp of cocoa and brown sugar, along with 1 1/2 tsp espresso powder. Add the boiling water and stir until ingredients have dissolved. Evenly pour over the cups of batter (about 3 tbsp per cup). Place cups on a cookie sheet and bake for 20?25 minutes, or until espresso is just absorbed and the cakes are set. Remove from oven and set cups on a rack to cool for about 15?30 minutes. [The first time I overcooked the cakes, so don't be afraid to take them out even if they look like they're not done.
