1 cup chopped walnuts
1/3 cup brandy
2 tsp Vanilla Extract

.75 cup butter, salted


How Do I Make Steamed Persimmon Pudding?

Here is how you make Steamed Persimmon Pudding:

Butter or grease a large (9- or 10-cup) tube pan or metal bowl. DO NOT USE AN ANGEL FOOD CAKE PAN.Add 1" of water and a rack to a stock pot large enough to hold the tube pan or bowl.Sift together sugar, flour, cinnamon, and nutmeg in one bowl and set aside.Melt butter and set aside.In another large bowl, dissolve the baking soda in 3 Tbsp. hot water.Add persimmon pulp, and eggs. Blend well.Add sugar mixture and all other ingredients. Blend well.Scrape into buttered pan and cover tightly with aluminum foil.Place on rack in large stock pot.Cover pot and simmer on medium heat for 135 minutes.Monitor water level once or twice, but no more than that.Add boiling water if more is needed.Remove pudding from stock pot and cool for 15 minutes on a rack before inverting over a plate.Serving Size: Makes 16 servingsNumber of Servings: 16Recipe submitted by SparkPeople user KATERUSSELL010.
