Preheat oven to 350? F. Spray muffin tin. Stir sugar, cornstarch, ginger cinnamon & salt. Beat egg whites in a separate bowl. Stir in pumpkin and sugar mixture. Gradually stir in evaporated milk. Spoon 1/4 cup into each well.Bake 25-28 minutes or until centers come out clean by inserting a sharp knife. Cool 20 minutes then refrigerate for 1 hour minimum. remove from wells to serve.
