Add a room warm egg, salt, sugar. Pour the dough in a bowl sift or 7-8 dl flour and mix-up a couple of minutes. Then add the remaining flour to and knead, leaving the last 2 dl flour. Add pieces of soft margarine and mix-up re-smooth. Continuing the kneading and add little by little rest of the flour, till the dough is elastic and shiny, and to create the hands and the bowl loose (PS you don?t have to add all the rest of flour, just as much that hands and the bowl will loose). Cover the dough with a dish towel or clining film, place the bowl somewhere worm (25-30C) and let the dough to rice volume of a two-foldrise. Leave it there in one hour, the knead it down and process this more two times (let in rice and knead dawn).Sprinkle flour over a low table, scrach dough to the bowl. Mess lightly with that largegas bubbles in fission. Cut the dough equal three portions. Roll about half centimetre thick sheets. Spread with unsalted butter, shake top of that sugar, cinnamon and as mch raisins you think you want to. Roll the sheet into roll. Do the same with two other sheets. Now plaite the rolls together (like a plaited pigtail). Place the pretzel top of the plate. Cover with towel and let it warm place again about one hour. Brush with room temperature beaten egg, sprinklethe surface of coarse sugar or almonds if you like, about 15-20 minutes before you put the pretzel into the oven.
