Brown sugar rice pudding made a little lighter by using Splenda brown sugar mix. The bourbon, vanilla extract and cinnamon add a lovely depth of flavor. Brown rice adds a little fiber to this sweet dessert. While you may be tempted to use skim or nonfat milk in this recipe, please note it will not come together properly if you don't use 3.5% (aka whole) milk. While this isn't a 100% light/low sugar dish, it also brings in much needed proteins and fiber to make it a very satisfying dessert. A small portion will be very comforting and satisfying.

1 Large Egg
2/3 cup Brown Rice (cooked)
3 cups milk
1 oz bourbon whiskey
1 tsp vanilla extract
1 tbsp cinnamon
dash salt


How Do I Make Bourbon Brown Sugar Rice Pudding?

Here is how you make Bourbon Brown Sugar Rice Pudding:

1. Mix salt, rice and milk together (set aside 3 tbsp milk for later) in a medium saucepan. Cook on high heat until milk boils, turn heat down to low.2. Simmer milk/rice mixture on low for 15-20 minutes, or until rice is tender but still a little firm (cook longer if you like softer rice).3. In a small bowl, combine egg with Splenda brown sugar mix. Take 2/3 cup of the hot milk/rice mixture and slowly stir it into the egg mixture. This step is key as this "tempers" the egg to keep it from turning into scrambled egg in your rice! 4. Once you have tempered the egg/sugar mix, stir it slowly all into the pot of milk and rice. Once mixed, keep the heat on low and cook for another 10 minutes. If the pot starts to boil, remove from heat temporarily and/or add in the reserved milk you set aside in the beginning. 5.Once you have cooked this mixture for 10 minutes, remove from heat. Then mix in vanilla and bourbon. Once these are incorporated into the pudding, mix in the cinnamon. 6.
