1/2 Gallon Milk (2% or less)

How Do I Make Heather's Rice Pudding?

Here is how you make Heather's Rice Pudding:

Pour the milk into a 4 quart pot and heat over low to medium heat to a slow boil. Add the rice and continue at a slow boil for 30 minutes to 60 minutes, the rice should be very tender & have soaked up a lot of the liquid, but there still should be some liquid in the pot. It should look like runny rice pudding. In a small bowl mix together 3 eggs, vanilla extract and sugar. Pour it into the rice mixyure in the pot and cook another 5 minutes, stirring VERY frequently. Turn off heat and pout into containers to serve or store. You can eat this warm or cold. Really good both ways!
