1/2 vanilla bean, split
1/4 tsp salt
2 c non-fat milk
1 c whipping cream
1/2 c sugar
2 large eggs, beaten
1/4 tsp cinnamon

Here is how you make Lisas rice pudding:

Combine raisins in saucepan. Add enough wter to cover the fruit. Bring to a boil over high heat. Remove from heat. Let stand for 10 minutes; drain well.Preheat oven to 350F. Grease a shallow 1 1/2 quart baking dish.Place the water in a medium saucepan. Bring to a boil over high heat. Stir in rice, vanilla bean and salt. Reduce the heat to low. Cook, stirring occasionally, for 10 minutes. Stir in the milk and whipping cream. Add the granulated sugar, eggs and cinnamon and mix well. Cook over low heat until rice is tender about 10 minutes. Remove and discard vanilla bean. Stir in the raisins.Spoon the mixture into the prepared baking dish. Bake until set, about 15 minutes. Serve immediately.
