4 eggs
1 can whole evap. milk, 13 oz
1.5 cups non-fat milk
1 tsp vanilla
3/4 cup sugar
1 cup cooked rice
3/4 cup raisins
ground nutmeg


How Do I Make Rice Custard Pudding?

Here is how you make Rice Custard Pudding:

Pre-heat oven to 350*.Put eggs into a buttered casserole, beat up a bit with a fork. Add milks, vanilla and sugar and combine well. Add rice, mix in well. Stir in raisins. Sprinkle top with nutmeg. Place casserole in a larger pan, add boiling water to that pan to about 2/3 up the casserole. I do this in the oven so I don't have to handle these hot pans too much. Bake about 60-90 minutes. After 30 minutes, gently stir the mixture, trying to not disturb the crust on top too much. Return to oven. Check in 60 minutes, if not done you could stir it a bit again. Custard is done when a knife inserted comes out clean.
