I developed this recipe from a class I took at the Culinary Institute of America. I substituted low-fat ricotta cheese for marscapone and elimined a HUGE percentage of the butter by roasting the peaches in the oven, instead of in a skillet. It's a family favorite.

1 tsp brown sugar, divided
1 tsp lemon juice, divided
1/4 tsp cinnamon, divided
1/2 tablespoon unsalted butter, divided

1/2 cup ricotta
1 tablespoon honey
1/4 tsp lemon zest
1 pinch salt
1/2 teaspoon almond extract
1/4 freshly grated nutmeg

Here is how you make Roasted Peaches with Ricotta Filling:

1 Preheat oven to 425°F. Line a baking sheet with aluminum foil. 2 Add lemon juice to each peace. Sprinkle peach halves with brown sugar and cinnamon. Place butter in the cavity of the peach. Place them cut-side-up on the prepared baking sheet. Roast until the peaches are tender, 20 to 30 minutes. If the juice on the pan begins to burn, add a little water and loosely cover the fruit with foil. Ricotta Filling: 1 Mix ricotta, zest , extract and honey together. Cover with plastic wrap and set aside in the refrigerator. 2 For a pretty presentation, spoon ricotta filling in a martini glass and top with one peach. Garnish with fresh mint.
