Mix in cocoa powder and sugar to evenly distribute throughout the cookie mixture. Beat the egg before adding to mixture. Add rum, and butter and mix. I actually use a potato masher to help to mix better. The mixture shouldn't be too dry or too wet. Just sticky enough to roll in the coconut flakes. Grab cookie mixture by teaspoonfuls and roll into balls, then roll in coconut flakes to coat. Refrigerate for about 30 minutes and serve. Makes about 24 balls/servings.
