1. Preheat oven to 350 degrees.2. In a large pot over medium heat, combine the apples, lemon juice, raisins, ginger, brown sugar, apple juice, cinnamon and nutmeg. Cook until a chunky sauce forms, about 10 to 12 minutes. Once apples are soft, remove from the heat.3. Season chops on 1 side with salt and pepper. Add chops to a baking pan that has been lightly sprayed with cooking spray, seasoned side down. Season the opposite side of the chops and bake for 1 hour, or until internal temperature reaches 155 degrees. 4.
