1/5 cup sugar
1/4 cup water
1/2 oz lemon juice
sprinkle of lemon zest


How Do I Make Honey Panna Cotta in Blueberry Sauce?

Here is how you make Honey Panna Cotta in Blueberry Sauce:

SAUCE: in saucepan, heat blueberries, water and the sugar over medium heat to a boil. Stir in lemon juice and reduce heat to medium-low; simmer 10 minutes or until sauce begins to thicken, stirring occasionally and crushing some of the berries with back of spoon. Set aside to cool to room temperature.PANNA COTTA: In (another) pot sprinkle gelatin over half and half. Let sit about 10 minutes, then slowly heat to a simmer over medium heat, stirring in sugar, honey, salt, and some lemon zest, whisking frequently. Once it begins to bubble from the heat, remove from heat and stir in vanilla. Strain through a fine mesh strainer into a 2-cup pourable measuring cup.COMBINE: Once sauce is cool and begins to set, portion into bottom of desired serving dishes and let set a few minutes. Pour panna cotta 'custard' over sauce; do not stir (but some of the sauce may come loose and mix with the cream).
