170g plain flour (all-purpose)
170g castor sugar (superfine)
60g melted butter
1 egg
1 teaspoon vanilla extract
170g dates (pitted & chopped)
1 teaspoon bicarb of soda (baking soda)
1 cup water

1 cup brown sugar
8 tablespoons cream
120g butter
1 teaspoon vanilla extract


How Do I Make Sticky Date Pudding with Caramel Sauce?

Here is how you make Sticky Date Pudding with Caramel Sauce:

I make this in an oven proof dish but you could make it in a greased and lined 22-23cm cake pan. Preheat oven to 180C (350F). Make the Caramel Sauce first as you will need to have it ready to drizzle some over the pudding before putting it in the oven. Combine all the caramel sauce ingredients in a saucepan and allow to simmer. Set aside.Mix the flour, sugar, butter, egg, and vanilla in a bowl. Combine the dates and water in a saucepan and bring to the boil. Remove from heat and add the bicarb of soda (you will get a foamy reaction). Add the date mixture to the other ingredients and gently mix to combine. Pour into your prepared dish or cake pan. Drizzle a couple of tablespoons over the the top of the pudding and bake in the oven for about 40 minutes (or until cooked). Half way through the baking process, drizzle some more of the caramel sauce over the pudding to keep it moist and not 'cakey'.
