3 (or 4) small Catneloupes, pureed to equal 500 ml puree
250 ml Champagne, or dry sparkling white grape juice
Juice of 1 Lime
50 g Icing Sugar
small grating of ginger (optional)
2 Egg Whties
Lime and Lemon slices, for garnish




How Do I Make Sunshine Sorbet?

Here is how you make Sunshine Sorbet:

Substitute orange slices, if desired, or mix and match. Nutrient information is for champagne, not grape juice.Place the canteloupe puree in a large bowl and pour in the champagne and lime juice. Sieve in the icing sugar, and mix the ingredients together well. Pour the mixture into a shallow, freezerproof plastic container, cover and freeze for about 3 hours, until half-frozen and mushy.Put the egg whites in a large, dry bowl and whisk them until stiff.
