1/2 t baking powder
1/4 t baking soda
1/4 t ground cardamom or 1/8 t ground nutmeg
1 slightly beaten egg
1/2 cup packed brown sugar
1/2 cup apricot nectar or orange juice
1/4 cup unsweetened applesauce
2 T cooking oil
1/2 cup finely snipped (or chopped) dried apricots

Apricot Icing:
1/2 cup sifted powder sugar
2 to 3 t. apricot nectar or orange juice

Here is how you make Spiced Apricot Bars:

1. In a medium bowl stir together the flour, baking powder, baking soda, and cardamom; set aside. In another bowl stir together the egg, brown sugar, apricot nectar (or orange juice), applesauce, and oil until combined. Add egg mixture to flour mixture, stirring just until combined. Stir in the apricots.2. Spread batter in an ungreased 11x7x1.5" baking pan. Bake in 350 degree oven for 20-25 minutes or until wooden toothpick inserted near the center comes out clean. Cool on a wire rack for 2 hours. Drizzle with apricot icing. Cut into 24 bars.Apricot Icing: In a small bowl stir together 1/2 cup sifted powdered sugar and enough apricot nectar or orange juice (2 to 3 t.) to make icing of drizzling consistency.Note: I used orange juice in the bars and icing, so nutrition info was calculated using orange juice.Also the pan size is kind of a weird size, but I just used a slightly bigger pan and did not spread it all the way to the corners or it would have been too thin.
