Stir in the mango and then divide cake mixture between 12 paper cups. If you want extra heat, you can place half a deseeded chilli across the top of each cake before bakingBake for about 20 minutes or until risen and just firm to the touch. Leave to cool for at least 20 minsPlace remaining castor sugar in a bowl with the water and heat gently until the sugar is dissolved. Bring to the boil for about 3-4 mins until you have a syrup. Stir in 4 tbsp. of vodka-be careful, it splutters!Pierce the top of the cakes with a skewer and drizzle syrup over.
