Milk, nonfat, 1/2 cup
Whole Wheat Flour, 3 cup
Baking Powder, 2 1/2 tsp
Salt, 2 dash or a pinch, optional
Vanilla extract, imitation, alcohol, 1 tsp

GLAZE
Milk, nonfat, 1-2 Tb.
Powdered Sugar, 1 cup


How Do I Make Spinach Cake?

Here is how you make Spinach Cake:

1. Preheat oven to 350 F. 2. Steam or boil spinach, if fresh, until limp and soggy. Thaw, if frozen. You will need 1 cup of the soggy stuff. Drain any excess water and puree in a food processer. 3. Mix granulated sugar, oil and applesauce using your electric mixer on lowest speed. Beat for 5 min. 4. Add eggs one by one and beat 30 seconds after each addition. 5. Add spinach puree and the rest of the main ingredients. Mix well. 6. Pour the cake mixture into a 9x12 oven proof cake pan that has been oiled or sprayed with non-stick spray. Flour the pan, also, if you desire. 7. Bake the cake for 35-40 min or until a toothpick inserted in the middle comes out clean. Let it cool completely.8. After cake is cooled, put powdered sugar in a small bowl. Mix 1 tablespoon milk into the powdered sugar with a spoon. Add more milk, a little bit at a time, until glaze reaches the consistency you desire. Spread glaze evenly over top of cooled cake. Cut into 24 pieces and serve. Refridgerate cake if you will not be finishing it within 2 days.
