Before beginning, make the xylitol into "powdered sugar" by processing it in the blender for 30-60 seconds. If it doesn't seem to get powdered, add 1 tsp corn starch and blend again - let it rest before trying to remove it from the blender. Combine butter, vanilla, and 1/2 cup "powdered" xylitol in a large mixing bowl. Add flour and salt. Mix thoroughly. Mix in nuts.Form dough into 1" balls and bake at 400 degrees for 8 minutes.
