Trim ends, wash and chop rhubarb. I like to use very young stalks. If you use more mature stalks and don't like the texture, slice them lengthwise before chopping. Combine the dry ingredients then add the rhubarb.Coat a 9 x 11 pan with cooking spray. Add the fruit mixture.Combine ingredients for the topping and spread over the fruit.Bake at 350* for 60 -75 mins. The crisp is done when the fruit is bubbly and shiny.Experiment with the sugars to get it as sweet or as tart as you like it. The way I make it, it is quite sweet.
