Here is how you make Matzo (Matzah) Brittle (or Toffee):

Preheat oven to 350 degrees F. Place matzo on a baking sheet with an edge. I recommend spraying the pan with non-stick spray, placing a layer of foil on the pan, then spraying again before you put your matzo down (trust me). Break the pieces as needed to fill the tray. In a saucepan melt the butter and brown sugar and bring to a boil. Continue to cook another 3 minutes or so, until the mixture is foamy and thick. Remove from heat and carefully add the vanilla, stirring to combine (mixture will bubble when the vanilla is added, so use caution). Immediately pour the caramel mixture over the matzo, spreading to create an even coating. Place the baking sheet in the oven for about 10 minutes or until caramel is bubbly. Do not let the caramel burn! Remove from the oven and sprinkle chocolate chips over the hot matzo (be careful not to let any hot caramel touch you). Wait about 5 minutes for the chocolate chips to soften, then spread melted chips with a spatula to coat the matzo in an even layer. Sprinkle the chocolate coating with nuts or any other toppings you wish. Place the tray in the refrigerator for 30 minutes to an hour until chocolate is firm. Remove from the refrigerator and cut into pieces (as small or large as you like). Pieces can be stored in an airtight container.
