Mix together 1 TB gelatin with 1/2 cup hot water and let sit five minutes.In a blender add gelatin/water mixture with one box extra firm Mori Nu tofu. Blend until fluffy.Add sugar,IMO,Lemon Juice,vanilla, salt, and soy milk. Blend until smooth then pour into two graham cracker crusts.
