1 Cup Buttermilk, 1%
3 Large Egg Whites
1/4 Tsp Cream of Tartar

1/4 Cup Water
1 Tsp Vanilla
3 Large Egg Whites
1/4 Tsp Cream of Tartar
1/8 Tsp Salt

Here is how you make Vanilla, Vanilla Cupcakes:

For the Cupcakes:Preheat Oven to 350. Mix flour, salt, baking soda and baking powder together in a bowl. Put the margarine and sugar in a mixing bowl and cream together on high until well blended. Add egg yolks one at a time, mixing well in between. Mix in Vanilla. Turn mixer down to low. Add flour mixture and buttermilk alternately starting and ending with flour, mix until just combined. Using clean, dry beaters, beat the egg whites and cream of tartar at a high speed until stiff peaks form.. Fold one-third of egg white mixture in with cake batter carefully. Gently fold in the remaining egg whites. Line 24 muffin cups with cupcake liners. Spoon batter into cups and bake for 23 - 25 minutes. Cool on a wire rack.For the Frosting:Put the sugar, water and vanilla in a saucepan, bring to a boil. Without stirring cook for 3 minutes or until a candy thermometer registers 250. Mix egg whites, cream of tartar and salt in a large bowl, beat using a clean dry beater until foamy. Pour hot syrup in a thin stream over egg whites, beating at a high speed until stiff peaks form. Reduce mixer to low speed and continue beating until mixture cools.Top cooled cupcakes with frosting. Serving Size:?Makes 24 Cupcakes
