1/2 cup pumpkin puree
1/2 cup truvia natural sweetener
2 Ener-g Egg Replacer eggs, prepared (1 tbsp + 1/4 c warm water)
1/4 cup white whole wheat flour
1/4 tsp salt
1 tsp vanilla
2 tbsp Hershey's Special Dark cocoa powder (or PURE chocolate extract)

for mint layer:
1 cup powdered z-sweet (powdered xylitol; find this at Whole Foods)
1 1/2 tbsp Earth Balance Whipped buttery spread (vegan margarine), or smart balance light for a lighter (but also more chemical-laden!) alternative
2 tbsp unsweetened vanilla almond milk
1 tsp peppermint extract
2 teensy drops green food coloring


How Do I Make Andes Mint Vegan Fudge?

Here is how you make Andes Mint Vegan Fudge:

Preheat oven to 325.Foil-line an 8x8 pan and spray with canola oil cooking spray.Melt chocolate and pumpkin together in a medium saucepan over medium-low heat, stirring constantly until evenly combined. Once fully melted, take off the heat and stir in egg replacer, truvia and vanilla extract. Fold in flour, cocoa powder/extract, and salt and mix until *just* combined. Pour batter into prepared pan and spread evenly around. Bake for approx 40 minutes (my oven ran around 30min) and let cool completely before next step.To make mint layer, combine all ingredients in a small/medium bowl and mix with an electric mixer. Once the brownies have cooled, spread the mint layer evenly over the top of the brownies. Put in fridge for 30 minutes for the mint layer to set.
