Once fully melted, take off the heat and stir in egg replacer, truvia and vanilla extract. Fold in flour, cocoa powder/extract, and salt and mix until *just* combined. Pour batter into prepared pan and spread evenly around. Bake for approx 40 minutes (my oven ran around 30min) and let cool completely before next step.To make mint layer, combine all ingredients in a small/medium bowl and mix with an electric mixer. Once the brownies have cooled, spread the mint layer evenly over the top of the brownies. Put in fridge for 30 minutes for the mint layer to set. Once it has, lift foil out, carefully remove your fudge and slice! ENJOY!
