Makes 12 good size portionsPreheat the oven to 350 degrees F. Grease a 9" x 5 " loaf pan with a light spray of olive oil. Cut a piece of parchment paper to fit the bottom of the pan and set it in place.Place the flour, baking powder, baking soda, salt and fresh ground cinnamon in a bowl and whisk to combine.Mix in the cyrtalized ginger and the walnut pieces.Place the maple syrup, almond milk, orange juice, olive oil, and vanilla in a second bowl and mix to combine.Spoon the batter into the pan.Bake for 40 - 45 minutes or until the loaf springs back when gently touched in the centre.Note.
