Here is how you make Vegan Vanilla Pudding:

1. In a large saucepan stir together the sugar, cornstarch and salt until everything is evenly mixed.2. Gradually stir in the soy milk and coconut milk.3. Bring just to a boil over medium heat, stirring constantly.4. Remove from heat and stir in the extract(s). Pour into serving dish, and place plastic wrap directly on the top of the hot pudding to prevent a skin from forming.5. Refrigerate until chilled. Makes 8 1/2 cup servings. I like this served over sliced bananas, or fresh berries.
