Mix dry ingredients together thoroughly. Add shortening. With a hand beater, mix the shortening in to the floor until it is evenly distributed and forms little dough balls (about 1/2" in length). Add 3-4 tbsp water, cold from your tap. Mix initially with hand beater for a minute. Complete the mixing by hand. Roll out the ball on a WELL floured surface with a WELL floured rolling pin. Take care with rolling...stretching too thin may promote breakage. Even with best intentions, this crust might break a little being placed in the pie dish. Not a problem! It is amazingly elastic and can be easily mended with light hand pressure on the two ends you would like to be fixed together.Fill and bake as you would for a normal crust for your choice pie.
