2 large eggs
1 1/2 tsp of almond extract
750g yogurt, plain, 1 % milk
1 tsp of guar gum (emulsifier and binder found at health food stores)

Here is how you make Dark Cherry Frozen Yogurt (Sugar Free!):

Serves 6 (makes about 6 cups)- Set a saucepan over medium heat. Add the cherries, agave nectar, water, and stevia. Simmer for ten minutes to soften the cherries.-Meanwhile Scramble the eggs in a medium bowl.-Strain cherries into a bowl when done. Pour a little of the hot liquid into the eggs whipping as you do so. Then add the eggs back to the sauce pan. Whisk constantly until it thickens. Add the almond extract and cherries to your custard. Cool via an ice bath or refrigerate until cold.-In a large bowl whip the yogurt. Gently sprinkle the guar gum into the yogurt as you 'whip it good'! This prevents lumps from forming.-Add the cold cherry mixture to the yogurt. Stir until it is completely incorporated.
