1 yellow onion, chopped very fine, 4 gloves garlic, chopped very fine. 4 tablespoons olive oil, 1 bunch asparagus, cut in 1 inch diagonal, 5 cups chicken broth, 1 1/2 cups aborio rice, sea salt and freshly ground pepper to taste, 3/4 cup freshly grated parmesan, splash of lemon juice if desired.


How Do I Make Rissoto with Asparagus?

Here is how you make Rissoto with Asparagus:

Saute one chopped onion and garlic in 2 tbs olive oil. Add rice and saute for 5 minutes or so. Slowly add broth, 1/2 cup at a time, stirring often until absorbed then add additional 1/2 cup until rice is cooked through. Meanwhile, cut asparagus into diagonals and saute in 2 tbs olive oil for 3 minutes or so. When rice is done, add asparagus, grated Parmesan, sea salt and pepper. Add a little lemon juice if desired.
