1 jalapeno pepper
1/2 red bell pepper (or other color if you prefer)
cilantro to taste
1 1/2 cups lowfat shredded cheese

Here is how you make Vegetarian Mexi-Bake:

Preheat oven to 350 degrees.Mix beans and corn in a bowl put a spoonful or so aside. Put avocado in another bowl. Mix gently with lime juice. Then add tomato, jalapeno pepper, bell pepper and cilantro.Put one of the tortillas in the bottom of the casserole dish. Follow with half of the bean/corn mix, then 1/2 of the salsa, and 1/3 of the cheese. Add another tortillas followed by remaining bean mix, salsa, and 1/2 cup of cheese. Add the final tortilla, remaining 1/2 cup of cheese topped with the beans/corn you set aside.Bake 40 minutes until cheese is melted and warm throughout.
