Bake at 375 for 20 minutes then flip and bake for 15 more minutes. Egplant should be browned. In a large skillet, cook onions and peppers then add the morningstar farms crumbles (regular or sausage). Drain can of kidney beans. Lay baked slices on eggplant into a round deep pie dish. Put 1/2 of the crumbles mixture on top and spread a layer of sauce, then add a layer of kidney beans. Over this, layer some more sauce and a sprinkling of cheese. Put the rest of the crumbles on top, cover with sauce and the rest of the cheese. Bake in the 375 oven for 25-30 minutes until hot and bubbly. Let sit for 5 mintues and serve.
