1 can black beans, drained & rinsed
1/2 medium onion
1 large bell pepper
1/4 cup lentils, dry
1/3 cup couscous, dry
1/2 cup water
1/2 cup shredded cheddar
6 Tbsp shredded cheddar
sea salt to taste
1 tsp garlic powder

Here is how you make Vegetarian Black Bean Cabbage Rolls:

Cook lentils until tender. In a skillet, saute onion & bell pepper with olive oil spray. Stir 1/2 cup water into onion & peppers. Bring to a boil & stir in garlic powder & couscous. Remove from heat, cover & let sit 5 minutes. Mix together all ingredients except for cabbage leaves & 6 Tbsp shredded cheddar. Spoon mix into cabbage leaves & roll. Place in a lightly greased baking dish & sprinkle each roll with 1 Tbsp shredded cheddar. Bake covered at 400 degrees for 25 minutes.
