Black beans, cooked, 14-ounce can, drained, or cook your own beans from scratch. Or substitute with small red beans for higher fiber.
Sweet Potatoes, raw, whole, approx. 1.5 lb pre-cooked weight
Small onion
1 garlic clove, fresh
Corn tortillas, approx. 6-inch in diam., 9 each
Olive oil, extra virgin, 1 Tbsp.
Cheddar cheese, lower fat, 2% shredded, 1 cup
Green chile enchilada sauce, canned, 20 ounces
Mrs. Dash seasoning, southwest chipotle flavor, 1 tsp
Cayenne pepper, 1/2 tsp
Cumin, 1 tsp
Red chile powder, 1 tsp

Here is how you make Tex Mex Vegetarian Bean "Lasagna":

Peel and dice (1/4 inch cubes) the sweet potatoes. In large bowl, toss the sweet potatoes with 1 T olive oil, Mrs. Dash southwest chipotle seasoning, cayenne and red chile powder to coat. Spread this mixture out in one layer on a very large jelly roll pan (or cookie sheet). Bake at 375 degrees for approximately 30 minutes or until soft.Dice onion in 1/4 inch pieces. Peel and chop the garlic into fine pieces. Saut? together in a non-stick frying pan til just slightly soft. You can use 1 tsp olive oil to saut? if you would like.Rinse canned beans thoroughly to remove "sludge" and salt, or cook your own beans from scratch. In small bowl, toss the beans with 1 tsp cumin powder and set aside.Slice tortillas into fourths to aid in layering.When sweet potatoes are done being baked, pull from oven and set aside. Turn oven own to 350 degrees.In a 9 x 13 rectangular baking pan, layer the beans, sweet potatoes, enchilada sauce and onion/garlic like a lasagna using the tortilla pieces like "lasagna noodles" in between the layers. Be sure to put a thin layer of green chile sauce down first in bottom of pan to prevent the layers from sticking. Sprinkle the 1 cup of low-fat cheddar cheese on top. Cover pan with aluminum foil and bake for approximately 40 minutes.
