Saute the veggies in the oil. When they are tender mix them with all the other ingredients in a mixing bowl. Use a potato masher to mix it all together. The consitancy should be that of a regular meat loaf. Pour mixture into a loaf pan and bake at 350 for about an hour. Let the loaf rest for approx. 15 minutes before serving.
