1 lb green beens, strings removed, cut into 1in pieces
1.5lbs lean beef cut into 1 inch cubes (stew meat)
1 large onion, sliced thin
2 cups water
4 tbsp olive oil
1/4 tsp turmeric
1/2 tsp cinnamon
1 1/2 tsp kosher salt
1/4 tsp ground black pepper
4 tbsp tomato paste
2 tbsp fresh squeezed lime juice
1 tomato, peeled and sliced

Here is how you make Green Bean Koresh (stew):

Makes about 6 servings, give or takeBrown meat and onions in 1 tbsp of the oil.Add salt, pepper, turmeric and cinnamon and cook for a minute or so. Add the water, cover, and simmer on low heat for 45 min, stirring on occasion.Sautee the green beans briefly in the remaining 1tbsp of oil and add to the pot. Stir in tomato paste, sliced tomato and lime juice, cover, and simmer on low heat another hour to hour and 15 min. Serve hot over warm basmati rice and enjoy an authentic Persian dish :)** Can also be made with lamb or with chicken breast. If using chicken breast cut the water down to 1.5 cups and simmer for only 20 min in the first step.** Can also use frozen or canned green beans, but I would skip the sautee step and cut the salt, especially if using canned.
