4 Tbsp fresh parsley, chopped
12oz can kidney beans, drained and rinsed
1 Tbsp soy sauce
1 Tbsp apple cider vinegar (or to taste)

Saute onion, garlic and ginger in oil in a large soup pot until onion is just tender. Add spices, stir for 1 minute. Add squash, potatoes, tomatoes, and lemon juice. Bring to a boil then simmer for 1/2 hour, stirring regularly. Add water 1/2 cup at a time if you think it looks too thick.Add parsley and beans, soy sauce, and simmer for another 1/2 hour, or until potatoes are tender (take a bite to check!).
