14 oz can low-fat refried beans
1/2 onion, finely chopped
1 cup cherry tomatoes
1T chopped garlic
1/2 cup water
3T low salt taco seasoning mix

8 low carb 7 inch whole wheat tortillas
2oz low fat cheese

low fat sour cream


How Do I Make Bean and Yves Veggie Quesadillas?

Here is how you make Bean and Yves Veggie Quesadillas:

In a nonstick skillet saute onions over medium heat until translucent. Add garlic, tomatos- saute for 5 minutes more. Add Yves veggie ground round- break up. Sprinkle with taco seasoning and add water. Stir and cook over medium heat for 5 minutes. Add refried beans- mash into skillet. Cook over medium-low for about 10 minutes, stirring occasionally.Shred cheese. In small pan heat place a tortilla. Top with one cup of bean/veggie mixture, sprinkle with 1/2 ounce of shredded cheese. Top with second tortilla. Heat in pan over medium for about 4-5 minutes, flip and heat other side. Be careful not to burn.Slip onto plate- cut into 4 quarters with a pizza slicer.
