saute carrots first in about one forth the garlic and some olive oil until golden brown.. then add all veggie ingredients and saute' until slightly browned stir fry consistency. add beans drained. simmer on low.In a separate pan heat tomato sauce remaining garlic, oregano, and new mexico chili powder to taste I use about two teaspoons... or more if i want it spicy...add a bit of water .. and then some wondra to make the sauce about enchilada sauce thick. simmer for about half hour... sauce should turn a nice dark red, when done add to veggies mixture stir in well, serve on a tortilla with cheeze and garnish.
